I recommend Ootoya(???) as a good restaurant to try some good Japanese food. Not too expensive, and there is a good selection.

Ippudo (???): for Kyushu ramen Ringer hut: for Nagasaki food (like Chanpon) Komoro Soba: for buckwheat noodles

Bhe best local food is available in small, single owner shops. Do check Lonely Planet Guide, or web pages that cover the place you visit, to find some of them.
