My favorite is poppoyaki. Niigata is noted for poppoyaki. This is the poppoyaki.

Poppoyaki is what we baked with a special machine. Flour, brown sugar, water,carbonated water and Myouban are the ingredients of the poppoyaki.

I have never heard the name and from just looking at it I cannot tell what it is and what it is made of :) Could you tell us a little bit more about it?

It is strange, but I don't remember the name of my favorite dessert name (I will have to ask my wife and complete this answer. It is a brochette of transparent jelly served with green powder (is it green tea?). It is not very sweet and feels quite fresh.
