What are the must-try summer festival food/snacks?

This is the summer festival season, and they have lots of food stalls at summer festivals.

What do you recommend as the best festival food to try?

My favourite for the summer is Kakigohri (crushed ice).

My favorite is poppoyaki. Niigata is noted for poppoyaki. This is the poppoyaki. image description

Poppoyaki is what we baked with a special machine. Flour, brown sugar, water,carbonated water and Myouban are the ingredients of the poppoyaki. image description

I have never heard the name and from just looking at it I cannot tell what it is and what it is made of :) Could you tell us a little bit more about it?

It is strange, but I don't remember the name of my favorite dessert name (I will have to ask my wife and complete this answer. It is a brochette of transparent jelly served with green powder (is it green tea?). It is not very sweet and feels quite fresh.
